Bruschetta with Roasted Garlic Aioli

Fresh, flavour-packed, and on the table in minutes — the snack everyone asks for the recipe.

You know that moment when guests arrive and you want something out that looks like you tried — but you definitely did not spend an hour in the kitchen?

This is that recipe.

Crispy gluten-free crackers. Creamy roasted garlic aioli. Fresh tomato bruschetta piled on top. Shaved parmesan. A little fresh basil if you're feeling fancy. Done in under 15 minutes and gone in under five.

For real.

Why this snack works harder than it looks

Bruschetta gets a bad reputation as just a pretty appetiser. But when you build it right — quality olive oil, fresh tomatoes, real parmesan, and a flavour-forward aioli — you're actually delivering healthy fats, lycopene from the tomatoes, and calcium from the cheese.

It's not just delicious. It's nourishing. And nobody at your table needs to know that part. 😄

Real Talk — why this is always on my entertaining table

This is my go-to when people come over. It looks impressive, it comes together fast, and it works for almost every dietary need — especially with gluten-free crackers as the base.

The secret is the Roasted Garlic Aioli. It transforms a simple cracker into something that tastes like it came from a restaurant. I always keep the YGY Easy Eats Roasted Garlic Aioli Seasoning in my pantry — it's one of those blends that earns its spot every single time.

Make the bruschetta topping first. Let it sit for a few minutes so the flavours come together. Then assemble right before serving so your crackers stay crisp. That's the move.

What you need

Makes 20–24 cracker bites · Prep: 15 min

  • 1 box gluten-free crackers — sturdy enough for toppings

  • 1½ tsp YGY Easy Eats Roasted Garlic Aioli Seasoning ← Youngevity

  • ¼ cup prepared YGY Easy Eats Roasted Garlic Aioli ← Youngevity

  • 3–4 Roma tomatoes, finely chopped

  • 3–4 tsp Sunset Gourmet Bruschetta Seasoning Mix, hydrated per package directions with olive oil or avocado oil

  • 3 tbsp Parmesan cheese, freshly grated

  • Fresh basil, thinly sliced (optional garnish)

Make it

  1. Make the aioli — In a small bowl mix the prepared aioli with the dry Roasted Garlic Aioli Seasoning. Set aside.

  2. Prep the crackers — Lay gluten-free crackers flat on a serving tray.

  3. Spread the aioli — Add a thin layer of prepared Roasted Garlic Aioli to each cracker.

  4. Make the bruschetta topping — Combine chopped tomatoes with the hydrated Bruschetta Seasoning Mix. Let sit 2–3 minutes so the flavours come together.

  5. Assemble — Spoon a small amount of bruschetta mixture onto each aioli-spread cracker.

  6. Top with parmesan — Sprinkle freshly grated parmesan over each bite.

  7. Garnish — Add a sliver of fresh basil on top if using. Serve immediately.

💡 Pro tip: Assemble right before serving — the crackers stay crispiest within the first 20 minutes.

Kitchen Wisdom 💡

Choose a sturdy cracker. Not all gluten-free crackers are created equal. You need one with enough structure to hold the aioli and bruschetta topping without cracking in half. Test one before you commit to the whole tray.

Let the bruschetta sit. Mix the tomatoes and Bruschetta Seasoning first — even just 5 minutes of resting time lets the flavours bloom. Don't skip this step.

Assemble at the last minute. Have everything prepped and ready — aioli spread, bruschetta made, parmesan grated — then assemble right when guests arrive. Twenty minutes is your window before the crackers soften.

Make extra bruschetta topping. It keeps in the fridge for 2 days and is incredible on eggs, grilled chicken, or stirred into pasta. Never waste it.

Fresh parmesan only. The pre-shredded stuff has anti-caking agents that affect the texture and flavour. A block of parmesan and a microplane grater — that's the move.

FAQ

Can I use regular crackers instead of gluten-free? Absolutely — any sturdy cracker works. Gluten-free is just the base I use so this works for every guest at my table.

Can I make this ahead of time? You can prep all the components ahead — make the aioli mix, chop the tomatoes, grate the parmesan — but assemble right before serving so the crackers stay crisp.

Can I serve this warm? You can pop the assembled crackers under the broiler for 2–3 minutes to melt the parmesan. It's a whole different experience — equally amazing.

How many crackers per person? For a party appetiser count on 3–4 per person. For a snack plate it's more like 6–8.
